Roasted figs with prosciutto and gorgonzola

# 4 fresh eggs
# 50g gorgonzola (dolce)
# 4 slices prosciutto
# 1 cup rocket
# extra virgin olive oil
# salt
# cracked pepper

1. Pre-heat overn to 200c.
2. Wash and dry figs, make a small cut at the top of the figs and push in a small knob of gorgonzola.
3. Wrap each fig in a slice of prosciutto, secure a toothpick, and place on an oven tray.
4. Bake in the overn for 15 minutes.
5. The cheese will melt and the prosciutto will be crisp. To serve, remove the toothpick and place on plate and garnish with celery leaves.
